Boom Boom Shrimp Tacos


This past weekend we went camping and needed something yummy to cook for Friday night. Because it is Lent and we are Catholic, I needed an alternative to meat.

I have been on a shrimp kick, so I decided to make shrimp tacos. I went on pintrest and found a recipe from It’s A Keeper. Here is the link: http://www.itisakeeper.com/5955/shrimp-tacos-boom-boom-sauce/

I will have to say they were a hit!!! Everyone loved them (even my husband who always says he doesn’t like shrimp)! I feel the key to this successful dish was the sauce, shredded cabbage, and guacomole.

I made a few adaptations to the recipe, but overall it was very similar.


Ingredients

Shrimp

2 pounds shrimp

Cajun seasoning (Tony’s, Slap Yo Mama)

Olive oil

Boom Boom Sauce

1/2 cup light mayonnaise 

2 tbsp ketchup 

2 tbsp sweet chili sauce

2 tsp garlic powder

1 1/2 tsp Sriracha 

Accompaniments

1 pack flour tortillas

1 small pack shredded cabbage

1 avacodo (sliced)

Small pack of Monterey Jack cheese

1 small pack pico de gallo

Directions

First make the boom boom sauce by combining all ingredients and placing in the refrigerator until the shrimp are cooked. 

Next, peel the shrimp and cook over the stove using cajun seasoning and olive oil. 

Finally, assemble your taco by placing the shrimp on the flour tortilla, scooping small amount of boom boom sauce, and then applying the remaining ingredients.

This is such an easy, sophisticated meal. I would serve this for friends coming over for dinner. For a side I probably would make a spinach salad with bacon bits and a lemon vinagrette dressing.
