EASY Starter Freezer Meal Menu

Do you have zero time in the evenings to cook and wish you had an easy stash of decent meals?  We have the solution for you!!!! Everyone knows we are die hard freezer meal club fans.  We understand that this is something that everyone can’t form, but some of you would like help making some of your own meals so that you are not constantly trying to figure out what to make for dinner.

This blog was inspired by an experience Corrin had on Pinterest.  She found a pin (website) of 10 easy freezer meals that included a list of all of the ingredients.  (This was before our club).  She eagerly went to the grocery store and spent a few hundred dollars and bought a huge bag of gallon size freezer bags.  She enthusiastically tried the first recipe and it was just ok.  The second and third were the same, just ok.  Only 2 out of the 10 were really good.  The others barely got eaten with lots of food (money) going down the drain.

Today’s post will give you 5 of our freezer meal club’s ALL STAR recipes along with a GROCERY LIST!  We chose these particular recipes because #1 they taste good, #2 they are easy to assemble, and #3 they are easy to heat/cook.

The grocery list is chunked into areas of the grocery store.  We promise, you have most of these ingredients in your pantry.  The nice thing about these 5 recipes are that with dividing it the way we usually do, you will have about 9 ready to make meals in your freezer!  Plus the few ingredients you have to buy won’t be too expensive.  Please look for the meat on sale!  It makes all the difference if you are on a budget (which we all are!).

If you want to start a freezer meal club, but don’t necessarily have a lot of bites (Nana!) maybe take this post, go with a couple of girls to the grocery store and assemble them together. A few glasses of wine are a must!

We have included 2 chicken, 2 beef, and 1 pork recipe.

One more side note * our freezer meal club has lots of fabulous recipes.  We chose these five because they were pretty easy to assemble. More recipes will follow if we receive positive feedback from people using this post!  We want to  take a second to give a shout out to the best Freezer Meal Club Girls!!!!  They truly are awesome!!! Alyssa, Amy, Anna, Holley, Jen, Jessica, Kim, Laura, Lindsey, Tracy, and Vickie!!!!! They have spent their own time looking for amazing recipes and trying them first before they cook them for the freezer meal club.

5 Meals: Creamy Italian Chicken, Poppy Seed Chicken, Tex Mex Lasagna, Asian Honey Beef Kabobs, and Pulled Pork Sandwiches.

We will include each recipe and at the end of the blog post  will include 1 grocery list.

*** we recommend using low fat ingredients when appropriate

***Before placing ingredients in Ziploc bags, we recommend you using a sharpie or label to label the meal.  If you wait until after it is frozen, it won’t work as well.

*** When using the foil packs, make sure to place the paper side up to write directions.

Creamy Italian Chicken:  Place the following ingredients in a Gallon Ziplock bag- 4 small/medium skinless, boneless chicken breasts, 1 can cream of chicken soup, 1 dry pack of Italian season (found on the salad dressing aisle by the dry dressings), 1 – 8 oz cream cheese, and 1 can of rotel.  Flatten the bag and place it in your freezer. The day you want to cook, place your chicken mixture in a slow cooker on low for 4-6 hours.  The last 30 minutes pour in a small bag of broccoli. Serve over egg noodles or rice.

Asian Honey Beef Kabobs: (by Jessica Ligon) Ingredients: 2 ½ pounds steak (sirloin or ribeye), ½ c. soy sauce, 2 tablespoon veg oil, 2 tablespoons sesame oil, 3 tablespoons honey, 1 tablespoon  sesame seed, 2 garlic cloves, minced, ¼ tsp ginger. Directions- cut steak into 2-3 inch steak cubes and divide between two freezer bags. Combine all the marinade ingredients and mix well to distribute honey. Divide marinade between two bags of steak. Squeeze air out and seal. Marinater 24 hours or freeze. Thaw 24 hours and thread beef cubes and vegetables on a soaked (30 minute soaking time) wooden or metal skewer Grill on medium high until desired doneness. Serve with rice and corn (or mixed vegetables). These are so good and if you want to buy fresh veggies to add to the skewers to make them “fancy” you should do it!

Pulled Pork Sandwiches: Ingredients:  2 ½-3 lb pork sirloin roast or boneless  pork shoulder roast, salt, pepper, ½ cup water, 3 tablespoons cider vinegar, 2 tablespoons Worcestershire sauce, 1 teaspoon ground cumin or chili powder, 3 ½ cups bbq sauce, 10 kaiser rolls or hamburger buns. Directions:  Place pork in a slow cooker.  Season with salt, pepper. (In a small bowl combine the water, cider vinegar, Worcestershire sauce, and cumin or chili powder. Pour over pork and cook on low for 4-5 hours. Serve over Kaiser rolls are hamburger buns.  You can also add tater tots or French fries.

Poppy Seed Chicken Recipe By:  Anna Noack

6 cups cooked chicken breasts; 1-1/2 cans cream of chicken soup, 8 ounces of sour cream, 1 teaspoon lemon juice, salt and pepper to taste, 1 sleeve ritz crackers, 1 stick melted butter, 1-3 tablespoons poppy seeds

Mix first 5 ingredients together; put in 9″ glass pie pan; crush ritz crackers, sprinkle on top of chicken; drizzle butter on top; sprinkle poppy seeds on top; bake at 350 until brown and bubbly. Serve with garlic bread

Tex Mex Casserole

1 1/2 lb ground beef, 1 tsp minced garlic, 1 (15 oz) can black beans, drained and rinsed 1 (8 oz) package shredded sharp Cheddar cheese, divided, 2 Tbsp chili powder 1/2 tsp ground cumin 1 (10 oz) can diced tomatoes and green chilies, drained 1 (8 oz) container sour creme 1 (16 oz) bottle chunky salsa 6 (10 in) four tortillas

1. Brown beef and garlic 2. Combine mixture to black beans, 1 cup cheese, and next 5 ingredients 3. Layer 2 tortillas (I really like HEB homemade ones), put 1/3 mixture 4. Then add 2 more flour tortillas, mixture, flour tortillas, mixture…top with remaining cheese

To cook…thaw overnight in fridge (I sometimes do this…but other times haven’t) Bake at 375 for 1 hour or until casserole reaches 165 degrees.

Shopping list:

Salt Pepper 3 tablespoons cider vinegar 1 tablespoon Worcestershire sauce Cumin Chili powder 1/4 tsp ginger 1 tsp lemon juice 1-3 tablespoon poppy seeds 1 pack dry Italian seasoning 1/2 cup soy sauce 2 tablespoons veg oil 2 tablespoons sesame oil 3 tablespoons honey 1 tablespoon sesame seeds Minced garlic (I would use jar) 3 1/2 cups BBQ sauce

1 pack frozen broccoli 1 pack frozen corn or mixed veggies

Rice Egg noodles

Kaiser rolls or hamburger buns Frozen garlic bread 6- 10 in flour tortillas 1 sleeve ritz crackers 1 package of tater tots or French fries

2 1/2- 3lb pork sirloin roast or pork shoulder roast 1.5 lbs ground beef 8 small- med skinless boneless chicken breast 2 1/2 lbs steak (sirloin or ribeye)

1- 8oz shredded sharp cheddar cheese 16 oz sour crest 2 – 8 oz creme cheese 1 stick butter

2 1/2 cans cream of chicken soup 1- 15 oz can black beans 2 cans rotel 1- 16 oz chunky salsa

6 small tin pans (best found at the Dollar Tree: 2 !/4 oblong pans 5x8x1) 3 gallon ziplock bags Metal or Woden skewers
